Big Crumb Apple Coffee Cake Recipe

 (recipe tweaked from Smitten Kitchen) 

Apple Topping 

1 pound of apples (3 medium or 2 large), peeled, cored, cut into 1/2-inch chunks 

Juice of half a lemon 

1 teaspoon ground cinnamon 

1 Tbsp finely chopped crystalized ginger 

1 tablespoon granulated sugar 

  

Crumb Topping 

1/2 cup unsalted butter, melted 

1/3 cup brown sugar 

¼ cup + 1 teaspoon granulated sugar 

1 teaspoon ground cinnamon 

1 teaspoon ground ginger 

½ teaspoon nutmeg 

1/4 teaspoon kosher salt 

1 1/3 cups all-purpose flour 

  

Cake 

6 tablespoons unsalted butter, softened 

1/3 cup granulated sugar 

1 large egg 

1/3 cup sour cream 

1 teaspoon vanilla extract 

1 cup all-purpose flour 

1 1/4 teaspoon baking powder 

3/4 teaspoon salt 

 

Powdered sugar, for dusting
